time capsule

For our FHE activity this week, we dug up the time capsule that we buried in our back yard at the beginning of last year. Our time capsule doesn't hold things like most...ours holds a paper with information about each of us, stats, if you will. =) It's fun to first read last year's and compare with this years...height, weight, (my weight went down, yes!!) favorite colors, foods, TV shows, songs, and favorite activities. We get to learn a bit about each other this way. We then buried it in our side yard underneath our boat and the kiddos helped us dig.

We had a yummy treat while we did this, something so easy with just four ingredients: 1 pkg crushed oreo cookies, 3/4 cup melted butter, 14 oz can sweetened condensed milk, and 1 pkg semi-sweet chocolate chips. Combine the oreos and butter and mash them into the bottom of a 13"x9" cake pan for the crust. Then, melt 1 cup of the chocolate chips in the sweetened condensed milk in a microwave safe bowl for about one minute. Afterwards, stir for about two minutes to get it really mixed, then pour on top of the crust. Spread the remaining chocolate chips on top and bake 10-12 minutes at 350. Let set, cut, then refrigerate to set. So good. So fattening. I had to force myself to only sample one!
