Last week we made a couple of fun recipes in honor of St. Patrick's Day. I let the kids each pick a new dessert, so they had all the input on what got made each day! We still have one mint chocolate chip cookie recipe we haven't tried yet (things got really busy with school and clinicals this week, careplan, paper, and test, whew!) but we may get to that one tonight or tomorrow.
We started out with some St. Paddy's inspired carmel corn, recipe pinned here.
Then our annual green pancakes, and this time I added chocolate chips..and overcooked the pancakes. Oops. They were still good though. :)
And lastly one day we made this mint cheesecake, pinned here. I'm not a big mint fan myself (makes me feel like I'm eating toothpaste, blech), but the kids really liked it.

You did good! Everything looks so yummy! I had planned to serve green food all day, but ran out of energy during the week, so we had Lucky Charms for breakfast, choc. chip mint ice cream after lunch and green ice cream floats after dinner. hopefully I'll be a bit more creative next year. My 12 year old son had fun pinching neighbors that wern'y wearing green. :)
Corned Beef and cabbage OH YeAh!
Not sure I could eat the green popcorn,but definitely would snarf the mint cheesecake or brownies.
