nachos grande recipe

This is actually a Weight Watchers recipe that we tried for the first time tonight and we all enjoyed it! My whole family liked it, so I thought I'd share:

1 tsp canola oil
1 cup kidney beans rinsed and drained
1/4 lb lean ground turkey breast
1 small onion, chopped
1 small can diced tomatoes with green chiles
2 tsp mexican seasoning spice blend
1/4 tsp salt
6 oz reduced-fat, restaurant-style chips
3/4 cup shredded reduced-fat cheddar cheese
sliced olives, jalapeno peppers, sour cream if desired

Preheat oven to 425. Meanwhile, heat a large nonstick skillet over med-high heat. Swirl in the oil, then stir in the beans, turkey, and onion. Cook, stirring to break up the meat, about 3 minutes. Add the tomatoes, mexican seasoning and salt; cook until thickened, about 5 minutes. Remove from heat and keep warm.

Spread tortilla chips on a baking sheet that has been presprayed with a nonstick spray. Sprinkle chips with cheese, olives, and jalapeno slices. Bake just until the cheese melts, 3-5 minutes. Transfer nachos to a serving plate (I left ours on the cookie sheet) and top with the turkey mixture and sour cream; serve at once.

If you follow WW, this makes 8 servings of 1 1/4 cups @ 4 points per serving. My family at the entire recipe and Danny says he could have eaten more, just to give you an idea on portions. (And we didn't add the jalapenos)

are you doing the card trade Keepsake Trends is having.? Just curious if anyone on the forum was doing it. They said I could mail mine it so I thought that was cool.?
