fhe dessert

This was so so so yummy. If you make it, just make sure to use softened ice cream and then let it set overnight (or as we did, make it in the morning to eat at night...it needs several hours to reset the ice cream). Here is the recipe, let me know if you try it!

Oreo Ice Cream Dessert

6 Tbsp baking cocoa
2 Tbsp vegetable oil
1 Cup sugar
3/4 Cup evaporated milk
2 Cups cashew halves and pieces
1 pckg (17 oz) Oreos, crushed
1/2 cup soft margarine, melted
1 container (1/2 gallon) vanilla ice cream, softened
cool whip

In a sauce pan over low heat, combine cocoa, vegetable oil, sugar, and evaporated milk. Bring to a boil, stirring constantly; boil for one minute. Remove from heat and cool for 10 minutes. While chocolate sauce is cooling, combine cashews, crushed Oreos, and melted margarine, set aside 2 cups. Press remaining crumb mixture into a greased 13" x 9" x 2" pan. Carefully spoon half of the ice cream over the crumb mixture; spread evenly. Spoon chocolate sauce on top of the ice cream. Sprinkle with reserved cookie crumb mixture. Carefully spread remaining ice cream on top. Cover and freeze overnight. Serve with cool whip topping. Makes 16-20 servings. Posted by Picasa
